A graduate-level course in cryptography and data security taught at Worcester Polytechnic Institute, covering encryption and security fundamentals. One commenter's end-of-course project was a full C implementation of the Rijndael cipher, the basis of AES.
One commenter, a former student, calls it one of their favorite grad classes and recalls building a complete Rijndael implementation as the final project.

I love the shoutout. As a grad student at WPI somewhere around 2000 or so when AES was first, I took his "Cryptography and Data Security" course and my end of class project was a complete implementation (in C) of Rijndael. (I later found out that others in the class chose to implement portions of the cipher and not the whole thing.) It was definitely one of my favorite grad classes.
